Hatched from a desire to demonstrate the diversity of Nordic cuisine, KuPP is proving a draw for foodies across the capital – never mind Paddington locals.
Designed to cultivate a casual, all-day style of dining, each dish can be enjoyed individually – as part of a formal, structured meal – or shared informally between a group of you. Order a few and you’ll enjoy a Smörgåsbord of delights, literally.
So what should we expect to see on a shamelessly Scandi-obsessed menu?
Meatballs, obviously. Well, they’re here but they’re no ordinary meatballs. At KuPP, each one is hand-moulded, cured, and hot-smoked over oak and applewood, to create a rich, smoky flavour. Then they’re served in a secret-recipe beer sauce. So far, so tasty…
Then there’s the Salmon Coulibiac – a kind of Nordic Salmon en Croute, with layers of sustainably farmed salmon wrapped in salted puff pastry. This is a KuPP speciality, prepared and cooked daily. If the restaurant runs out, you’ll have to come back.
KuPP prides itself on the freshness of its food as well as its ability to source and select the finest ingredients from British and Scandinavian suppliers. Prepared simply, with taste, nutrition and longevity in mind, this is probably as good an advertisement for Nordic cuisine as London has seen.
